what does setting the easing type do?

So I am trying to add easing to my project for school and was wondering what exactly setting the easing type changes? I know how to add easing and change the velocity, but I keep seeing that, and I have tried it but I don’t really notice a difference.

In the Timeline toolbar, open the Set Ease Type drop-down and select the preferred ease preset:
